During quarantine - routine is out the window for me! I used to make my kids a sit-at-the breakfast-bar breakfast before they left for school. But, as quarantine continued on (and on, and on), I stopped making breakfast as I had one child in school, one child schooling from home, myself in my home office early, and my hubby rushing in and out. Our schedule was all over the place!
When I stopped to measure my ‘quarantine stress level’ one day, I realized that two things had dropped off for me; exercise and breakfast. {Exercise, oh my! That’s for another day} But, I have found that making “the most important meal of the day” for my kids and me is a way to keep the ‘normalcy’ train on the track, if you know what I mean.
As I returned to our breakfast favorites at home, I wanted to share my 13-year-old daughter Sami’s, quick, easy, and delicious breakfast recipe with you! It’s a staple in my house and I’m happy to have it back in our morning routine. This one is fun and it has some health benefits too (even though it tastes too delicious to be healthy)! It’s basically just an avocado whole wheat cafe-style sandwich that I love to whip up on a busy morning. Give it a try, and let me know what you think!

RECIPE -
- molly&you® Sweet Whole Wheat Beer Bread Mix
- Avocado
- Tomato
- Everything But the Bagel Seasoning (found at Trader Joe’s & others)
- Olive Oil (optional)
Take our Sweet Whole Wheat Beer Bread, lightly toast it and add sliced (or mashed) avocado. Top it with chopped tomato, and add seasoning to taste (I like to add more than I probably should…and I make sure my daughter brushes her teeth AFTER this one because it is chock-full of garlic). Feeling fancy? Drizzle some olive oil on top. (I like to make Sami feel like she is in a cute cafe when I do this!). ENJOY!!
