Cheers to Beer Cheese! Soup

A warm, hearty soup that really hits the spot on those chilly days!

 1 CRAFT BEER CHEESE DIP MIX
 4 baking potatoes, diced (may leave skin on)
 ½ lb bacon, cut into small pieces
 1 small onion, diced
 3 stalks celery, diced
 3 carrots, diced
 ½ cup flour
 2 cups half-and-half
 12 oz beer (less for thicker soup)

Cook potatoes in microwave, covered with water until tender.

Fry bacon and remove from pan (reserve grease).

Add onion, celery, and carrots to pan and cook until tender.

Add bacon to pan. Sprinkle with flour. Stir two minutes.

Add dry dip mix and slowly add half-and-half, stirring constantly. When desired consistency is reached, add beer and enjoy!
